Eat More Chicken


You will love me for this one. There is an incredibly easy to follow recipe for a pulled-chicken sandwich that will blow your mind. As with all my recipes, the theme is creating a healthy alternative to one of your favorites without compromising in taste. The Famous Martha’s Pulled Chicken Sandwich has the following ingredients: Chicken breasts, avocado oil, BBQ Sauce, paprika, garlic, Arizona rub, vegetable broth, salt and pepper, pickles and green apples. For the preparation, I oil the breasts thoroughly, then I cover them in rub, paprika, salt and pepper. Using an Instant Pot or a pressure cooker similar, I add oil to the bottom and when hot I place the breasts to sear them. Then, I simply add the vegetable broth and BBQ sauce and set them for 20 minutes. After they are done I simply use two forks to pull the breast apart.

Everyone loves a good pair of buns, mine are Brioche buns which I place on a skill with some Irish butter. A hearty portion of the pulled chicken goes in topped with BBQ sauce as needed, Sriracha to add some spice and slices of pickles and green apples.
