In The Daily Drip No.15 I showed you how you can bake some delicious and healthier alternative to chocolate brownies. But if you are more of a muffin guy or gal, keep reading as I will show you a healthier alternative to your favorites. This is another of my own recipes that I have mastered over the years. Once again, the ingredients are what make a difference. The mis is the Banana Muffin & Bread Almond Flour from Simple Mills, as you know by now I am a huge fan of this brand as they are as real as it get when it comes to the list of ingredients in the box. Almond flour are richer in vitamins and fiber versus the white processes general use flour. Following the instructions in the box I added milk and coconut oil which is a great alternative to butter. I do not add sugar since the flour has coconut sugar in it. For added nutritional value I add Chia seeds to the mix. Finally, they are topped with bits and pieces of walnuts and chocolate chips from Lily’s, which are sweetened with Stevia and have no sugar added.. You have to believe me when I say these are incredibly delicious muffins. Press a nice cup of espresso or your favorite coffee drink and enjoy one of my muffins in the morning.
